Salad Ingredients

  • 2-3 cups chopped cabbage mix
  • 2 green onions, minced
  • 1 cup edamame
  • 1/4 cup cilantro, minced
  • 1/2 lime

(You can add tofu or tempeh to this for more protein)

Dressing Ingredients

  • 1/2 lime, juiced
  • 1 tbsp rice vinegar
  • 2 tbsp peanut butter
  • 2 tbsp maple syrup
  • 1 tbsp coconut aminos
  • 1 tsp garlic powder
  • 1 tbsp sesame seeds

Instructions

  1. In a large bowl combine all of your salad ingredients and mix.
  2. In a small bowl combine all of your dressing ingredients (except sesame seeds) and whisk together until smooth.
  3. Toss dressing into salad. Sprinkle with lime juice and sesame seeds.

  1. Are there any other greens you think would be good for this? 🙂 I’m not a huge fan of cabbage!

  2. Tried the dressing plain and was not that impressed but put on salad greens/broccoli slaw mix with cilantro and it was delicious! Will make this again!
