Ahh nachos… How can anyone resist them? That perfection of each chip gloriously basked in beans, cheese and salsa. Its like heaven on earth right?

Well the bad news here is we all know that nachos are typically loaded with fat, grease, animal byproducts and lots of other nasty stuff… Trans fats anyone?

But guess what?

Ive got good news as well! What if you could still have nachos? What if there was a nacho recipe that was so healthy, you could eat it everyday, and it would actually be good for you!? Thats right, I said GOOD for you.

Well my friends, today all your dreams have come true.

I present to you the most Bad Ass Vegan Nachos on earth. They are HIGH CARB, LOW FAT & made from all WHOLE FOODS!

Yes, I am a genuis…

Chip Ingredients

  • Organic Corn Tortillas (cut into triangles)
  • 1 Lime
  • Sea Salt
  • Chili Powder
  • Cumin

Nacho Cheese Sauce Ingredients

  • 1 Small Red Pepper, Deseeded and Chopped
  • 1 Tsp Chili Powder
  • 1/2 Tsp Cayenne
  • 1/2 Tsp Salt
  • Juice of 1/2 Lemon
  • 4 Tbsp Nutritional Yeast
  • 4 Tbsp Hemp Seeds
  • 1 Garlic Clove
  • A Teeny Tiny Bit of Water

Nacho Ingredients

  • Chips
  • Nacho Cheese Sauce
  • Fresh Pico, Salsa or Chopped Tomato
  • Black Beans, Pinto Beans or Any Bean You Like 🙂
  • Cilantro
  • Hot Sauce
  • Avocado or Guacamole (optional)
  • Fresh Jalapeños


  1. Preheat oven to 450F, place the cut tortillas on a pan, cover with lime juice and sprinkle spice mixture over top.
  2. Bake for 5-7 minutes or until they start to crisp.
  3. To make the cheese sauce, blend all ingredients in a high speed blender until smooth. You want to use just enough water to get the mixture moving. I usually blend 30-40 seconds and taste. If its still grainy blend a bit more. Place in refrigerator for a few hours or until it thickens (best to make the day before).
  4. Lay out the nacho chips on a plate and pile all of the nacho ingredients on top and enjoy!

What an amazing healthy meal that you can eat day in and day out and NOT feel guilty at all. Based around whole foods and very low in fat.

  1. Hemp seeds are not available in Australia and we cannot legally buy them from US sources. What would you recommend as a substitute?

    1. In South Australia you can buy Hemp Seeds, there are also places online that sell hemp seeds as well.

  3. Love the nacho sauce! I added some green onion to mine (because I add green onion to practically everything…it’s like my version of sriracha I guess). I’ve made batch after batch lately and put it so many things. The other night, I thought it would make a great cheesy pizza sauce, but I’d prefer a more traditional italian-style pizza sauce and not a southwestern spiced one. What if you added soaked sundried tomatoes and swapped out the spices for some basil or other herbs? Maybe there’s a badass vegan pizza recipe in the future?

  4. I made this the other night with soaked cashews instead of hemp seeds since I didn’t have any on hand… It tastes AMAZING!!! The only problem I have is that my Ninja blender does not create the creamy consistency I want, it’s more like a chunky hummus texture.. I am thinking about investing in a Vitamix but I just was curious if a food processor might be what I need instead. Any tips for a creamier sauce are appreciated (steaming the pepper instead of raw? Or would that ruin the taste..hmm), this recipe is the BOMB! Thanks Hannah & Derek!

  7. Hi! I’m excited to try these!! But I tried making the Nacho sauce with only a Tbsp of hemp seeds because that is all I had and the sauce became very liquidy, Is there something I can blend it with that will thicken it up?

  10. I made the nacho cheese sauce. It’s super delicious but I don’t think it tastes much like cheese! It tastes more like a red pepper sauce that has a slight cheesy flavor. I’ve put some in a burrito and on top of some potato fries, and omg, the flavor is just fantastic. YUM, thanks for the recipe!
