Simple Sushi Bowls

As you all know I am completely addicted to sushi, so much that I make it multiple times a week. Over the last few weeks work has been crazy and I’ve gotten pretty lazy in the cooking department (to say the least) the house is also a complete mess but that’s a story for another day…

So what’s a girl to do when she wants sushi but has no time?

The answer is sushi bowls! Its basically just your favorite sushi roll, thrown into a bowl. I know, extravagant huh? This is probably one of the simplest recipes you will ever make but it totally hits the sushi spot, if thats a thing I don’t know… I guess it is now!

Anyways lets get to the recipe! Here’s what you will need.

Ingredients

  • 1 Cup Uncooked Short Grain Brown Rice
  • 1/2 Cucumber Peeled & Diced
  • 1 Carrot Shredded
  • 1/2 Avocado Cubed
  • Sesame Seeds
  • Tamari, Wasabi & Pickled Ginger (Optional)

Method

Rinse and drain your brown rice and combine with 2 cups of water in a small sauce pan, bring to a boil, reduce heat to low and cook until all the water is absorbed (about 30 minutes).

While the rice is cooking peel, dice and prepare your vegetables. Once the rice is done and has cooled for a bit transfer to a serving bowl. Add the vegetables, sesame seeds and whatever else you like on top. Serve with wasabi, tamari and pickled ginger if you like :)

  1. I’m so lazy this is the only way I make sushi any more. And it saves me grief with the whole nori situation. Made the raw salad dressing from the book the other night - totally tasty!

  2. Hello! Sushi bowls really are the best. And everytime I see one of the vegan instagrammers post a picture of one, I get the cravings! I like to add a tablespoon of seasoned rice vinegar to the rice as well as crumple up some seaweed in there. The little snack seaweed packages work really well for this. And green onion. You could really add anything.

    This is also a recipe that’s easy to serve to non-vegans. And it’s husband approved!

  3. I love the recipe! I cannot tell you how much my daughter loves veggie sushi. When she came home from Japan that’s all she wanted along with tempura. By the way, I just found your website, I LOVE IT! PEACE & BLESSINGS.

  4. This is a great idea for people who can’t grab sushi quickly and cheaply. I’m lucky I can grab about 10 pieces of sushi for 2 dollars here in Thailand, so I eat it all the time but….I’ll definitely keep this in mind for when I’m too lazy to go to the supermarket :) Thanks Hannah.
