Pad Thai

Base Ingredients

  • 1/2 Red Bell Pepper, Sliced
  • 1-2 Carrots, Shredded
  • 1 Small Handful Cilantro, Chopped
  • 1/2 Cup Bean Sprouts
  • 3 Zucchini, Spiralized
  • 1/4 Red Onion, Finely Sliced
  • 1/2 Lime
  • Sesame Seeds

Sauce Ingredients

  • 1/2 Red Bell Pepper
  • 1 Roma Tomato
  • 1/2 Cup Sun-Dried Tomatoes (Soaked)
  • 3 Medjool Dates, Pitted (Soaked)
  • 2 Tbsp Tahini
  • 1 Tsp Grated Fresh Ginger
  • Pinch of Cayenne Pepper
  • 1/2 Lime, Juiced

Method

First soak your sun-dried tomatoes and dates for 1 hour or until very soft.

Prep all of your base vegetables and toss in a large bowl. Blend all the sauce ingredients until smooth and pour over the pad thai.

Mix the sauce together with the salad until well coated. Sprinkle with the sesame seeds and squeeze with lime juice.
