Ingredients

  • 1 Yellow Onion, Diced
  • 3 Cups (28oz Canned) Fire Roasted Tomatoes
  • 3 Cups (2 Cans) Chickpeas, Drained & Rinsed
  • 1 Tsp Cumin Seeds
  • 1 Tbsp Peeled & Finely Chopped Fresh Ginger
  • 4 Medium Garlic Cloves, Minced
  • 1/2 Tsp Cayenne Pepper
  • 1/4 Tsp Salt
  • 2 Tsp Garam Masala
  • 1 Tsp Coriander
  • 1 Tsp Tumeric
  • 1/4 Cup Water
  • Salt To Taste (Add at the end if desired)
  • 1 Cup Uncooked Rice

Method

Place a large saucepan over medium heat and lightly toast your cumin seeds for about 1 minute.

Next add in your water, onions, ginger and garlic and saute until translucent (about 5 minutes). Slowly stir in your spices and let cook for 3 more minutes.

Raise the heat to medium high, add in your tomatoes and chickpeas and bring to a simmer.

Let cook for 15 minutes until all the flavors meld together.

Serve over rice.

Benefits

This Chana Masala is a great whole food recipe. Chickpeas are an excellent plant-based source of protein and fibre. They also contain exceptional levels of iron, vitamin B6 and magnesium.

Use brown rice to make this meal very satiating and nutritionally complete.
