Burrito Ingredients

  • Whole Wheat Flour Tortillas
  • 2 Cups Brown Rice
  • Vegan Refriend Pinto Beans
  • Red Onion
  • Red Pepper
  • Lettuce
  • Serrano Peppers
  • Organic Corn
  • Guacamole (or Avocado)
  • Cheese Sauce (from the Vegan Nachos)
  • Pico de Gallo (or Diced Tomatoes)
  • Hot Sauce

Instructions

  1. Cook the brown rice either in your rice cooker or in a pot.
  2. Mix together some of the brown rice and refried beans.
  3. Place the brown rice and bean mixture in to the center of the tortilla first. Then pile the rest of the ingredients on top.
  4. Wrap the burrito as shown in the video above.
  5. Put a non-stick pan on medium to high heat and grill the burrito on both sides for 3-5 minutes or until it is brown and crispy.

What an amazing healthy meal that you can eat day in and day out and NOT feel guilty at all. Based around whole foods and very low in fat.

Could you possibly come up with some rice and veggie recipes with like a maple glaze sauce, or some kind of sauces to put over the them to make them more yummy, and how do you make those really thick looking lentils everyone makes to put over rice???     1. we’re working on a complete weight loss guide that will include a 28 day meal plan.. most of the recipes will be very simple 5 ingredients or less but it won’t be a recipe book per se, it will be a comprehensive guide 🙂

  3. Awesome recipe! In fact, all the recipes you guys have are. I love burritos. One thing that drives me crazy is that every large size wrap I have ever looked at in grocery stores seem to have some type of oil listed in the ingredients. The oil free ones are usually a smaller size. Is this a big deal? I suppose I could make my own but that would take more time. Any ideas or recommendations? Thanks.

    1. we personally use the wraps that do have a bit of oil in them, if you make it more of occasional treat rather than an everyday meal then there isn’t a big issue with it 🙂
